About Us

My photo
We make intentional lifestyle choices to use the abundance God has given us here in the U.S., so that we can give to those less fortunate than us in 3rd world countries. We want others to see the difference as Jesus, not us. We are all sinners in need of a savior. We are NOTHING without Jesus! Everything we have comes from Him and it is such a blessing to share it!

Ugandan Cooking

Most of the cooking is done outdoors on little charcoal stoves.....
....or in small dark kitchens using wood, like this one:
(Rashida, one of our sponsored daughters)
Matooke is a traditional Ugandan dish (smashed bananas steamed inside banana leaves). Usually served with peanut sauce (made from ground nuts).
This is a newly made baking oven....
There are 7 kinds of bananas grown in Uganda; one of its main crops.
Posha (called ugali in Kenya) is the main staple in both countries. It's made from pouring ground maize flour into boiling water and "mingling" (stirring).
Boiled eggs are also common...
Banana leaves are used as lids for steaming.....

All the food prep is done outdoors......
Pumpkins, yams & sweet potatoes are also common.
Yes, even the youngest of children can be seen holding knives or machetes!
Cassava (a root vegetable) is another staple....

All the dish washing is done outdoors (here by the Special Needs students)..
Drying rack....
